A pit that runs from four until eleven

Pork, ribs and whole fish glazed in cane syrup boiled down here, tropical fruit cut over chilli and lime, and ginger beer on tap from a few streets away.

Everything worth ordering has been over coals. The pit is lit at half three and it does not go out until the last order, which is why the whole building smells the way it does.

Cane syrup is reduced in the kitchen from juice pressed in the valley. It goes on the pork, the ribs and the pineapple, and it is the reason people come back.

Nothing is held under a lamp. On a full Friday a plate takes twenty-five minutes and we say so when you book, rather than letting you sit and wonder.

Two small plates, one without meat, changed weekly.
Off the coals
Pork shoulder, beef ribs, whole fish and corn.
To finish
Valley fruit with lime, or the syrup pudding nobody lets us take off.
